Here is basic rub recipe that we like to use on pork shoulders and chicken. You can adjust ingredients according to what’s available. Common variables include using regular paprika instead of or in addition to the smoked paprika, using brown or white sugar instead of turbinado sugar, using black pepper, white pepper, dry mustard, adding cayenne for more heat, other dried herbs etc, etc – have fun with it.
Pork & Chicken Rub
- 3 cups turbinado sugar
- 3/4 cup kosher salt
- 1 cup smoked paprika
- 1/2 cup onion powder
- 1/2 cup garlic granules
- 1/2 cup chipotle powder
- 1/2 cup coriander
- 1/4 cup cumin
- 1/4 cup celery seed
