Smoking Sausage on the Primo couldn’t be easier – with nothing to prep it’s all about giving the sausage some time and smoke. You could certainly grill sausage and it would be delicious – but we think smoking them at a lower tempature is THE way to go. First, start with a high quality sauage. Locally here in Easton Maryland, we prefer the “Apple Maple Grillers” from the Amish market. Simply soak a few handfuls of apple and hickory chips and prepare the Primo for smoking. Target a smoking temp of 250 or so. Let them smoke for 45 minutes or so and then turn them over and let them go for another 45 minutes or so until they hit 160 to 165 internal temp. (a Thermapen is a handy tool here) That’s it! Enjoy them as you see fit!
