Garlic Lemon Filet Mignon

One of the basic benefits of owning a Primo is its ability to cook a great steak.  We are often asked how we do steak – here is a favorite method of preparing steak with garlic and lemon.  This recipe will work with any cut of steak- here we did filet mignon.

Start by trimming your steak of any excess fat or silver skin.  Coat both sides of the steak with olive oil, generous amounts of kosher salt, freshly cracked black pepper, and 2 cloves of roughly chopped garlic.  (about a clove per side of steak)  Cover with plastic and refrigerate for a minimum of 4 hours if possible- ok even to go overnight.  About an hour before you are ready to grill pull out of the fridge to get to room temperature.   Turn over a few times in the garlic oil mixture to distribute evenly.

Prepare the Primo for direct grilling- target a temperature of at least 400- ok to be hotter if desired.  IMPORTANT- Before you put the steak on brush off the garlic!

Depending on thickness of steak and grill temp, grill on both sides for 4-8 minutes

Pull the steak and let it rest.  Sprinkle again with kosher salt and squeeze the juice of half a lemon per steak on top.
